Our Sprouting story:

A Decade of Enchantment

2015 — A 1969 Volvo Named Paul & the First Waffle Sparks
The story begins on the road inside a stubborn old Volvo named Paul, a Falafel Waffle, and the goal of getting from the East Coast to the West Coast.

In 2015, Miguel, Katie, & Paul while traveling through Florida found a Vegan Falafel Waffle at a little vegan diner somewhere in the swamps. While sitting there eating it, Miguel, an avid vegan at the time and falafel fiend, rambunctiously said aloud that he could make something even better setting the challenge with the Universe. Only problem was... Miguel had never made waffles nor owned a waffle iron. And thus began the journey.

After a small visit to a Goodwill, Miguel scored a waffle iron! From there, he created a chickpea flour waffle recipe inspired by an Indian uttapam and there began the first iteration of the waffle we serve today.

Waffle iron now in hand, the trio began to tour Florida and then make their way across the Southwest, all the way deep into Mendocino County, California, trading waffles for cultural experiences & shelter along the way.

For our Founder Miguel the waffle iron became his creative way of connecting & creating community everywhere they went while spreading a bit of plant magic.

Unbeknownst to Miguel, the waffle was a seed to sprout so much more.
2016 — Oregon Country Fair & The Waffel People
After a year on the road and a season in Northern California, Oregon called. Once he landed in Eugene, Oregon, Miguel met a new partner named Cedar who was just as excited about creating GF, organic, vegan waffles as he was and conveniently owned a new tea shop in the hip Whiteaker Neighborhood where they could play and would eventually develop something truly special.

Wildly, on their second date at the tea shop, Miguel presented the possibility of attending a large & wild event called Oregon Country Fair in Veneta, Oregon and setting up a food vending booth together at one of the campsites surrounding the event. Seemed fun, challenging, & kinda sexy. The funny catch was neither had any mobile food vending experience but they decided to take the leap anyway and agreed to do it.

With only weeks to prepare, Cedar & Miguel set out to reformulate the Falafel Waffle to something more easily digestible, bought all the gear necessary, prepped all the extra goodies, and headed out to OCF Summer of 2016.

The event was a total success, though bumpy to say the least. We proved that we had something to offer, and a lot more to learn. From here, we were dubbed The Waffel People for the next year or so.
2018 — Peru, Ayahuasca & Food Theater
Now come 2 years later in early 2018, Miguel is now securely living in Mendocino County, California entirely off grid farming, crafting, & learning more deeply about plant medicine formulations.

During a Summer sourcing journey to Peru a new vision opened up during a several night ayahuasca ceremony for Miguel: food is the perfect blend of medicine, ritual, and story and Miguel could do more to spread awareness of how the farmer and their craft sat at such a potent crux for all humanity. He returned home invigorated and excited to see how he might best do so in the United States.

After returning home and continuing to farm full-time, it became apparent there was little to no real outlet for his crops nor those of his neighbors in an area saturated with farmers but no where to sell to. Seeing a void in the market, Miguel recognized he could potentially fill this need in the community with those magical waffles he started making in 2015 by creating a business that purchases from everyone around, could tell their story, craft something scrumptious, sell that, and then reinvest in our local economy and community.

Figuring a rebranding needed for this venture, Miguel renamed his concept The Enchanted Waffle and locked in the first real debut - Phish at The Gorge in Upstate Washington, a jam band concert over 3 days with 60k+ people. The Enchanted Waffle & Elixirs made its debut — colorful, magical, and 100% community-driven as a resource for nourishment even where not expected..This was when The Enchanted Food Theater was born.
2020 — The Pause & the Pivot
After 2 years of solid successful hometown events, The Enchanted Waffle and Miguel saw grander opportunities out and away from the hills of Northern California and in the Concrete Jungle that was the Bay Area. In early 2020 Miguel moved down to the Bay Area and just as we were gaining traction booking new opportunies and finally poised to launch in the Bay Area, the world shifted.

COVID forced us to close — but behind the scenes, we were still creating. In an unexpected pivot, we stepped away from waffles and dove into cookies, exploring new formats and ideas while everything else stood still.

It was a year of pause, reflection, and quiet experimentation — a reminder that growth doesn’t always look loud, and creativity doesn’t stop when doors close.
2021 — Returning to Texas
As the dust settled, it became clear that Texas offered a healthier, more supportive climate for small businesses than California did at the time.

With that clarity, Miguel packed up everything and headed back to Texas — the place where he was raised — to reset, rebuild, and begin again.

It was a return to roots, land, and possibility… a quiet but essential chapter before the next ascent.
2023 — Rebirth Through Fire
We reopened with momentum — then faced a series of hard lessons.

A food trailer scam.
A failed brick-and-mortar.
A festival marked by equipment failure and major losses.

We lost thousands. The path forward was uncertain. But the fire refined us. 2023 taught discernment, boundaries, and resilience — leaving us clearer, stronger, and far more intentional.
2024 — The Rise of Enchanted Catering
We began rebuilding intentionally — bringing nourishment to resident events, private gatherings, and community celebrations.

People wanted connection, ritual, and a taste of magic. Our catering arm brought the magic directly to them.
2025 — The Enchanted Era Unfolds
By 2025, we were catering multiple events every week — resident experiences, corporate spaces, weddings, parties, festivals, and more.

This year expanded into:
• Mind/Body & Culinary Experiences
• 3-Course Farm-to-Table Dinners
• Our in-house CPG line

Our Founder Miguel couldn’t make pancakes to save his life, so the waffle iron became his creative anchor. Then the falafel waffle appeared, and everything shifted — waffles became a canvas - now savory waffles were unlocked and everything grew from there.

2014 planted the seed for something far bigger that Miguel was soon to discover!

They jumped headfirst into vending at Oregon Country Fair, not knowing what they were doing… only knowing they had heart, vision, and a desire to nourish the community.
