Our Sprouting story:

A Decade of Enchantment

2015 — A 1969 Volvo Named Paul & the First Sparks
The story begins on the road inside a stubborn old Volvo named Paul. We traveled through Florida, across the Southwest, and into Mendocino, trading waffles for shelter along the way.

Our Founder Miguel couldn’t make pancakes to save his life, so the waffle iron became his creative anchor. Then the falafel waffle appeared, and everything shifted — waffles became a canvas - now savory waffles were unlocked and everything grew from there.

2014 planted the seed for something far bigger that Miguel was soon to discover!
2016 — Oregon Country Fair & The Waffel People
After a year on the road and a season in Northern California, Oregon called. Once there, Miguel met a new partner who was just as excited about creating GF, organic, vegan waffles — and with absolutely zero vending experience, they decided to take the leap anyway.

They jumped headfirst into vending at Oregon Country Fair, not knowing what they were doing… only knowing they had heart, vision, and a desire to nourish the community.
2018 — Peru, Ayahuasca & Food Theater
Early 2018, during a sourcing journey to Peru a new vision opened up during a several night ayahuasca ceremony : food is medicine, ritual, and story and Miguel could do more to spread that awareness.

Farming full-time with no real outlet for his crops, Miguel created his own. That July, at Phish at The Gorge in Upstate Washington, The Enchanted Waffle & Elixirs made its debut — colorful, magical, and 100% community-driven - as a resource for nourishment even where not expected..

This was when The Enchanted Food Theater was born.
2020 — The Pause & the Pivot
Just as we were gaining traction and finally poised to launch in the Bay Area, the world shifted.

COVID forced us to close — but behind the scenes, we were still creating. In an unexpected pivot, we stepped away from waffles and dove into cookies, exploring new formats and ideas while everything else stood still.

It was a year of pause, reflection, and quiet experimentation — a reminder that growth doesn’t always look loud, and creativity doesn’t stop when doors close.
2021 — Returning to Texas
As the dust settled, it became clear that Texas offered a healthier, more supportive climate for small businesses than California did at the time.

With that clarity, Miguel packed up everything and headed back to Texas — the place where he was raised — to reset, rebuild, and begin again.

It was a return to roots, land, and possibility… a quiet but essential chapter before the next ascent.
2023 — Rebirth Through Fire
We reopened with momentum — then faced a series of hard lessons.

A food trailer scam.
A failed brick-and-mortar.
A festival marked by equipment failure and major losses.

We lost thousands. The path forward was uncertain. But the fire refined us. 2023 taught discernment, boundaries, and resilience — leaving us clearer, stronger, and far more intentional.
2024 — The Rise of Enchanted Catering
We began rebuilding intentionally — bringing nourishment to resident events, private gatherings, and community celebrations.

People wanted connection, ritual, and a taste of magic. Our catering arm brought the magic directly to them.
2025 — The Enchanted Era Unfolds
By 2025, we were catering multiple events every week — resident experiences, corporate spaces, weddings, parties, festivals, and more.

This year expanded into:
• Mind/Body & Culinary Experiences
• 3-Course Farm-to-Table Dinners
• Our in-house CPG line
