Inspired by the vibrant imagination of Dr. Seuss, this is a brunch where color swirls, flavors sparkle, and storybook wonder meets farm-direct craftsmanship.
Everything served at this table is:

Made entirely from scratch.
The plates may look like they wandered out of a wackadoodle dreamscape — but the ingredients are deeply real. Regeneratively sourced. Thoughtfully prepared. Generously portioned. Plated with intention.
This is a storybook-inspired dining experience rooted in integrity and imagination — where playful visuals meet serious sourcing, and whimsy is supported by real farms and real craft.
Because imagination belongs at the table.
And if you feel called to lean into the spirit of it — stripes, sparkles, curious hats, bold colors, or something delightfully over-the-top — you’re warmly invited to do so.

The Menu

Course I — Roast Beast & Who Hash
Texas Wagyu brushed with smoked honey glaze, layered over waffle-pressed beet and carrot potato hash with bright chimichurri and radish sprouts.
Plant-Based Option:
Stacked roasted red and golden beets crowned with fermented cashew crème and herbaceous chimichurri.
Elixir Pairing:
Lemongrass Ginger Tonic
Sparkling ginger lemonade with citrus and crystallized ginger.
Course II — Green Eggs, Ham & Curry Waffle or caramelized rainbows & Guac Waffle
A golden gluten-free curry waffle topped with herb-infused green eggs, local Austin bacon, guacamole, sunflower sprouts, hemp seeds, and maple drizzle.
Plant-Based Option:
Caramelized rainbow carrots, roasted onions, mushroom bacon, guacamole, sprouts, and hemp seeds.
Elixir Pairing:
Rainbow Sparkle Mango Lemonade
Layered mango nectar lemonade, blue spirulina lemonade, butterfly pea floater, and edible shimmer.
Course III — Colorwheel Cashew Cream Dessert Plate
Vibrant scoops of cashew cream confections in storybook hues, naturally dyed cream cheese smears, freeze-dried fruit dust, and playful textures.
Elixir Pairing:
Strawberry Sea Foam
Strawberry-kissed coconut water topped with airy blue spirulina coconut foam and a strawberry sugar half rim.
